This allows the user to modify the instruments,
without understanding the code.
Some documentation is included,
and a lot of names are changed to be closer to the domain.
Remove "+" symbol, since we don't need it for recorders
Change symbols used to be slightly more intuitive than digits
Change a lot of the defaults
and other minor tweaks
